November 29, 2017: Minestrone & Focaccia
I made sure I had some leftover dough and made a nice sized Focaccia -- with some olive oil, thyme, cherry tomatoes, zucchini and salt. Delicious!
Accompanied with a tasty Minestrone Soup -- I remembered to have veggie broth this time!!

I can't remember but I may have skipped the veggies listed in the recipe and bought a package of frozen veggies that had want I wanted...
