Split pea soup & Rosemary Cheddar Scones
Nothing much to say about this except that this is one of the best split pea soup recipes I have used -- extremely simple, nice texture. I did make two changes -- leaving out the potatoes and using 8 cups of vegetable broth rather than water.
I did make a side dish of roasted veggies that included red potatoes, along with red pepper, red onion and broccoli (I could not find red broccoli ;) ), seasoned slightly with olive oil, garlic, salt & pepper.
And what is a dish without bread? Paul Hollywood's "Rosemary & Cheddar Scones" from his "Bread" book, went perfectly with the meal.
