cheesy chicken (sin chicken) enchilada soup

A joint project for this meal -- a very easy & tasty cheesy enchilada soup.  To make it vegetarian -- just use veggie stock and don't add the chicken.  We added a can of corn to get some other textures in there.  We made the homemade enchilada sauce which was very easy -- again, to make it vegetarian, just use veggie stock.
