Turnip, Apple, and Potato Soup


Another very simple soup from the "Soup of the Day Book" (if any of these soups look good to you, just buy the book already!) .

Bottom line -- saute some onions in butter with some thyme. Add 2 apples (peeled, cored, quartered) and equal amounts of quartered & peeled turnips & potatoes (about a 1lb of each) and cover 1/2 way or so with water or veggie broth (I used the latter -- had some homemade broth -- more below).  Put lid on and simmer for about 10 minutes. Remove cover and added about 3 cups more of water/broth and let simmer for about 15-20 minutes until everything is soft.  Blend until smooth, return to pot and add salt & pepper (white pepper if you have it) to taste. Done.

And, as always, a nice bread to go with it (this one a white bread from poolish).
