Fettuccine with Zucchini, Asparagus, Tomatoes and Basil
Quick and easy dish -- even with making the fettuccine from scratch. I started with a Roasted Vegetable Pasta recipe with some minor variations -- fettuccine instead of linguine; sauteed the veggies; and added some extra seasoning (pepper, dried basil & oregano, chili pepper flakes).
If you don't make the pasta from scratch, this meal is ready from start to finish in under 30 minutes.
And what's a meal without bread -- a homemade ciabatta went nicely.
